The view is the reason people come back

Republic of Texas sits on the 20th floor of the Omni Corpus Christi Hotel’s Bayfront Tower, wrapped almost entirely in floor-to-ceiling glass. It’s a multi-level dining room built specifically so no table feels far from the water — a big part of why it’s landed on OpenTable’s Top 100 Most Romantic Restaurants list and remains a favorite spot for proposals.

The kitchen runs on USDA prime beef, wild game, and Gulf seafood, backed by a wine program that’s earned Wine Spectator’s Award of Excellence four years running. Ask for a window table facing the marina at sunset — it’s the reservation regulars request by name.

Pick a cut, then pick a finish

Choose a steak and a listed sauce to compare the course price. Wine pairings below are suggestions.

Step 1 — Choose your cut
Step 2 — Choose your finish
Filet Mignon, Simply Seasoned
$53
Why it worksFilet is the leanest, most tender cut on the menu — simple seasoning lets that tenderness be the whole point.
Pour with itA lighter Pinot Noir or a mid-weight Merlot won’t fight the delicate texture.
Filet Mignon, Green Peppercorn Sauce
$57
Why it worksGreen peppercorn sauce adds warmth and savory depth to the tender filet.
Pour with itA Cabernet Sauvignon has enough structure to stand up to the pepper.
Filet Mignon, Béarnaise
$57
Why it worksBéarnaise brings a buttery, herb-led finish to the lean filet.
Pour with itA medium-bodied Merlot complements the steak and buttery sauce.
Bone-In Ribeye, Simply Seasoned
$80
Why it worksThe ribeye’s marbling is the whole show — the most-praised dish on the menu, and it doesn’t need help.
Pour with itA bold Cabernet or Malbec matches the richness cut for cut.
Bone-In Ribeye, Green Peppercorn Sauce
$84
Why it worksGreen peppercorn sauce adds a savory finish to the richly marbled ribeye.
Pour with itSyrah’s peppery notes mirror the crust itself.
Bone-In Ribeye, Béarnaise
$84
Why it worksBéarnaise adds buttery richness and herbal notes to the marbled ribeye.
Pour with itA big Napa Cab can go toe-to-toe with both the fat and the sauce.
New York Strip, Simply Seasoned
$60
Why it worksFirmer texture and a beefier flavor than filet, without the ribeye’s heavy marbling — the middle-ground order.
Pour with itA Chianti or Sangiovese has the acidity to cut through the leaner fat.
New York Strip, Green Peppercorn Sauce
$64
Why it worksGreen peppercorn sauce complements the strip’s beefy flavor.
Pour with itZinfandel’s spice complements the pepper without competing.
New York Strip, Béarnaise
$64
Why it worksBéarnaise softens the strip’s robust flavor with a buttery, herbal finish.
Pour with itA Right Bank Bordeaux blend keeps the whole plate in the same register.
USDA prime, wild game & Gulf seafood

Cumberland, port wine reduction, Jack Daniel’s green peppercorn, béarnaise and horseradish cream sauces are $4 each. Oscar-style crab or shrimp is $19. The 8oz filet with a $4 sauce comes to $57 before sides.

Build a balanced plate

Pair one vegetable with one potato side

For a rich ribeye, asparagus or broccolini offers a lighter contrast. Creamed spinach and au gratin potatoes create a richer course. Most sides are $15; vegetable medley is $14. A $60 New York strip with a $4 sauce and one $15 side totals $79 before drinks, tax and tip.
